Le Poussin - More than just food

"Alex Aitken is the most amazing self-taught chef, and given the location in the middle of the New Forest, it’s like eating off the forest floor, especially now, during the mushroom season. There’s also lots of game, and brilliant puddings." Gordon Ramsay, October 1st 2005

Le Poussin at Parkhill
In 2004 Parkhill was closed for on-going renovation to transform it into ‘the ultimate house in the country’, and the elegant Georgian Whitley Ridge was opened on the outskirts of Brockenhurst, earning Alex his third Michelin star. We hope to re-open Parkhill in 2007.

Chalets De Vanoise

The resort of Courchevel is actually made up of 4 separate villages: Courchevel 1850,1650, 1550 & 1300 (La Praz).

Chalets de Vanoise is located in one of the most picturesque areas of Courchevel, two lifts away from Courchevel 1850 and a five minute ski away from the lower 1650. There is a ski lift just 100 meters down the hill from the chalet doors.

L'escalier
The former “Royal Standard” and more recently, “Latimer’s on the Quay” has undergone significant renovation, going back to its Georgian origins and even in some parts, to the city walls in which it is built.

Early on we realised that such a unique building required special treatment and we have been very fortunate to have David Collins, the internationally renowned hotel and restaurant designer, develop our plans into stylish restaurant and bar areas acknowledging the Georgian architecture whilst embracing contemporary themes suited to city living.
